INGREDIENTS
- 1 lb veggie crumbles (or ground chicken, turkey, lean beef)
- 4 cups low sodium veggie broth
- 1 medium white onion, diced
- 2 cloves garlic, minced
- 1 – 14.5 oz can no salt added crushed tomatoes
- 1 – 15oz can black beans drained and rinsed
- 1 – 15oz can kidney beans drained and rinsed
- 2 – 4oz cans diced green chiles
- 2 tbsp low salt taco seasoning
Optional toppings: fresh cilantro, fat free Greek yogurt, light cheese, crumbled multigrain tortilla chips
DIRECTIONS
- Put meat or veggie crumbles into a pan with 1 tsp oil and cook until brown (about 10-15 mins since they are usually sold frozen), if you are using meat make sure to drain before adding to slow cooker
- Add crumbles and the rest of the ingredients to a slow cooker, cook on high for 4 hrs. or until onions are cooked.
- Add toppings and enjoy
