- 1 can chickpeas (19 oz)
- 2 tsp kosher salt
- Juice of 1 lemon
- 1 garlic clove (sliced)
- 1/3 cup olive oil
- Additional toppings: sun-dried tomatoes, roasted red peppers, pesto, etc
Throw one can of drained and rinsed chickpeas in the food processor/mixer with kosher salt, lemon juice and sliced garlic clove. Turn on the processor and slowly pour in 1/3 cup of olive oil. Process until smooth. Serve with whole wheat pita or raw veggies.
*Note: You can always jazz this recipe up with sun-dried tomatoes, roasted peppers or pesto to make different types of hummus.
