Here is another quick and easy meal prep recipe using convenience products! ⁣

Wanted a fresh and delicious side dish for lunch/dinner but did not feel like doing all of the chopping. This only took a few minutes, is easily customizable, and is delicious!⁣
⁣
Here are the ingredients:⁣
⁣
✅1/2 a 14oz bag of plain coleslaw mix (it’s just shredded cabbage and carrots)⁣
✅one 16oz container of fresh salsa (we used mild)⁣
✅4 mini cucumbers, chopped⁣
✅2tbsp apple cider vinegar⁣
✅2tbsp olive oil⁣
✅ salt, pepper, and garlic powder to taste⁣
⁣
This turned out incredible and of course only gets better as it sits in the fridge. To make it a full meal (protein, carbs and fat) we paired it with lean ground meat, rice and avocado (plus a nice drizzle of sriracha 😋)⁣

You can make it any style you like: Asian, Mexican, Mediterranean, etc. they all contain the same components, you just switch it up for the style you’re going for. These serving sizes can vary based on your needs/goals, but the general recipe is as follows. ⁣

✅ 4-6 oz cooked protein ⁣
✅ 1-2 cups veggies⁣
✅ top with your sauce/seasonings of choice⁣
